The Duke’s Fillet

We’ve tweaked the original Swedish recipe which uses raw salmon before adding a maturing brine of brown sugar, dill and pepper by very lightly smoking the salmon first. The result brings a rather unctuous and rich flavour to the Gravadlax which marries wonderfully with the subtle flavour of the dill.

“Strath” means valley, and “Garry” is the river that flows majestically through it.

Situated in the heart of the Scottish Highlands, Loch Garry is the source of the River Garry, a waterway steeped in natural beauty and history that runs past our ancestral home, Strathgarry.

Winding its way through the rugged mountains of northern Perthshire, the Garry meanders by the imposing Blair Castle and on through the Pass of Killiecrankie.
